For Gambit:
Gambit's first limited series by Howard Mackie. It's a great book and show's us the mysterious side of Remy. The story and art is great and we are graced with Henri LeBeau's fabulous stache.
Gambit vol 5, by James Asmus is another I recommend anyone wanting to get into Gambit should read. It's a great story, but the artwork has its ups and downs. This series also debuts Fence, who quickly became a fan favorite.
X-Men vol 2 is good for looks at an earlier Gambit, we get to see plenty of Rouge and Gambit flirting and it furthers their relationship. We see parts of the angsty side of Gambit and parts of the fun-loving Gambit. Not to mention the wonderful art by Jim Lee.
Finally, if you're into the Rambit romance (That would be Rogue/Gambit for you heathen types) I would recommend you read Rogue and Gambit by Kelly Thompson, followed by X-Men Gold #30 by Mark Guggerheim, and finish it off with Mr & Mrs X. If my memory serves right, that should be 18 issues that take the off and on relationship between the two and solidify it, something fans of the character had been waiting for since 1994.
As for Laura:
I would recommend reading X-23 vol 3, by Marjorie Lou, it's stars both Laura and Gambit, and shows us more of the big brother/ mentor side of Gambit and his strong courage and loyalty.
And of course, All New Wolverine. Besides it being a fun story some of my favorite art in comics, it also introduces Honey Badger, later known as Scout, one of my personal favorite characters. đź‘Ť
