Well, hulk is perceived as a villain by others, so in a way his color is metaphor for how society views him. And Phoenix was sometimes a villain (though when she is she wears red which is a bit ironic)

Listen, green is symbolic in many ways. It's sometimes used for villains, sure. But it can also represent nature, for example. There is more than one way to look at it. Be more open-minded.

Wasn’t Hulk green due to a printing error? If I’m not misremembering, Hulk was originally intended to be grey, but the colours were messed up in his first appearance and he came out green instead.

They decided to run with it and keep him green, and later the grey Hulk was created as a reference to this.
